With the grill as the common thread of his new restaurant, Julián Mármol has created The Eight, a number that has accompanied the chef throughout his career. This concept has been designed exclusively for the Galería Canalejas Food Hall, in which the chef reinvents traditional and popular dishes such as hamburgers and sandwiches, extracting their full potential.
Julián manages to achieve excellence in each of the products he offers at The Eight, overseeing every detail of the process, from selecting the products to ensuring their natural quality and, of course, their flavour. To provide unique aromas and textures and preserve the tenderness, he uses Binchotan charcoal - a long-established tradition in Japan - to bring out the authentic flavour of each ingredient.
The Eight offers a high quality, simple, direct and refined cuisine that does not mask the flavours. They use Designation of Origin products and respect their essence to the full.
This renowned chef, who has held a Michelin star since 2019 with Yugo The Bunker, has also opened the restaurant Monchis at the Galería Canalejas Food Hall, Madrid's new gastronomic icon.
