Monchis is the fusion proposal of one of the two new restaurants that chef Julián Mármol, awarded a Michelin star in 2019, has created in the Galería Canalejas Food Hall. An unprecedented commitment to a delicious blend of Mexico and Japan, where creativity and excellence in techniques and flavours come together.

This restaurant offers a unique dining experience at its omakase bar - “leave it up to the chef” in Japanese. Mexican cuisine with Japanese inspiration, the first of its type in Europe and the second in the world

Diners at Monchis enjoy a unique experience based on the most popular Mexican dishes - such as tacos, gorditas or tamales - transformed into smaller snacks, which reveals their Japanese influence.

In this restaurant, Julián Mármol perpetuates the theme that has stayed with him since the beginning of his career: fusion without confusion. This philosophy translates into a fusion of cultures, influences and flavours, based on the correct selection of products of exquisite quality, without altering them excessively with spices or sauces, thereby upholding their purity.

This renowned chef has also opened The Eight restaurant in the Galería Canalejas Food Hall, Madrid's new gastronomic icon.
