The first of these, Monchis, is a succulent crossroads between Japan and Mexico where creativity and excellence in terms of techniques and products are paramount.
With this unique approach, you can discover how the most popular Mexican dishes, such as tacos, infladitas or tamales, are transformed into tiny snacks through the influence of Japanese cuisine.
Monchis also boasts the first Mexican omakase bar, inspired by Japanese concepts, in Europe and the second in the world. This experience, which means “to entrust oneself to the chef” in Japanese, implies both freedom and a great responsibility for the chef, who is responsible for surprising diners every day.
At The Eight, his second concept for the Galería Canalejas Food Hall, the grill is the common thread; a proposal where he shows his unique signature touch by redefining popular dishes such as hamburgers and sandwiches.
In this restaurant, you will see how Julián’s decision to use Binchotan charcoal for the embers, a long-established tradition in Japan, provides unique aromas and textures while maintaining the tenderness of the ingredients.
